Sheet Pan Fajitas
Ingredients

2 pounds boneless skinless chicken breasts
1 red bell pepper
1 orange bell pepper
1 yellow bell pepper
1 onion
12 ounce fajita seasoning packet
1/4 cup extra virgin olive oil
1 lime juiced
8 tortilla shells
shredded cheese
guacamole
sour cream
salsa
fresh lime juice
1. Preheat oven to 400 degrees.
2. Cut chicken, peppers, and onion into lengthwise slices and place in a large bowl.
3. Add fajita seasoning packet, olive oil, and lime juice.
4. Mix until chicken and veggies are evenly coated.
5. Spray a baking sheet with cooking spray.
6. Spread chicken and veggies out in a single layer over the tray.
7. Bake for 20 minutes, or until the chicken reaches an internal temperature of 165 degrees.
8. During the last 10 minutes of cooking, wrap tortillas in foil and place in the oven with the Sheet Pan Fajitas to warm.
9. Serve with tortillas and any desired toppings.
Crispy Chicken Burgers with Hot Honey Mayo

Chicken breasts (4)

3 oz of Greek yogurt

4 oz of Tortilla chips (any flavor of your choice)

1 tsp Oregano

2 tsp Paprika
-
2 tsp Garlic
-
pinch of Sea salt and ground black pepper
Hot Honey Mayo:

2 tsp Honey
2 tsp Chili sauce
4 oz of Mayonnaise
Juice of 1 lime
Additional needed ingredients:
4 Brioche Burger buns
4 Cheddar cheese slices
Lettuce
Red onion
1. Preheat the oven to 400 degrees.
2. Mix the yogurt, oregano, paprika, garlic granules and salt and pepper, and use to coat the chicken.
3. Crush the tortilla chips until they are very fine (TIP: I put the tortillas in a bag and use a rolling pin or any hard object to smash them.) Roll the yogurt coated chicken in the tortillas mixture.
4. Put the coated chicken breasts onto a grill rack (or cooling rack suitable for the oven) on top of a baking sheet and drizzle with the oil.
5. Bake for 20 minutes, turning the chicken breasts halfway through.
6. While they are in the oven, make the hot honey mayo.
7. Mix together all your mayonnaise ingredients in a small bowl and set aside until you assemble your burgers.
8. After the 20 minutes, remove the chicken from the oven. Carefully move the chicken to one side of the rack and sit the buns cut-side-up on the grill rack.
9. Place a slice of cheese on the top of half of the buns.
10. Return the chicken and bread to the oven for 5 minutes.
11. The chicken should be cooked through and golden (use a meat thermometer to test if you have one).
12. Stack the chicken burgers in the toasted buns with lettuce, onions and the mayo.
